Cinnamaldehyde is a hydrophobic, oily liquid that is sparingly soluble in water. It is, however, highly soluble in organic solvents such as ethanol, ether, chloroform, benzene, and petroleum ether. Additionally, cinnamaldehyde can be dissolved in fixed oils, vegetable oils, and mineral oils.
