  • Effervescent Powders & Water: Understanding the CO2 Reaction
    Effervescent powders release carbon dioxide gas (CO2) when mixed with water. The reaction between an acid (such as citric acid) and a base (such as sodium bicarbonate) produces water, carbon dioxide gas, and a salt (such as sodium citrate). The carbon dioxide gas is what causes the fizzing effect in effervescent drinks and powders.
