  • The Science of Sparkling Wine: Why is Champagne Bubbly?
Champagne is bubbly because of the carbon dioxide gas that is produced during the fermentation process. When yeast eats sugar, it produces alcohol and carbon dioxide as a byproduct. In the case of Champagne, the carbon dioxide gas is trapped in the wine due to the pressure inside the bottle, resulting in the familiar bubbles.
