Some climacteric fruits, like bananas and avocados, can be ripened after picking by exposing them to ethylene gas. This can be done by placing the fruits in a paper bag with a ripe apple or banana. The apple or banana will release ethylene gas, which will cause the peppers to ripen.
Peppers, however, do not respond to ethylene gas. This means that they cannot be ripened after picking, regardless of whether or not they are exposed to ethylene gas.
There are a few things that you can do to help peppers ripen before they are picked.
Make sure the peppers are fully mature before picking them. Mature peppers will be a deep red or orange color and will be soft to the touch.
Pick the peppers in the morning when they are still cool. Peppers that are picked in the heat of the day will not ripen as well.
Store the peppers in a cool, dry place. Peppers should not be stored in the refrigerator as they will not ripen properly.
