    The organisms that perform homolactic fermentation are primarily lactic acid bacteria (LAB). These bacteria belong to the genera:

    * Lactococcus

    * Lactobacillus

    * Streptococcus

    * Leuconostoc

    * Pediococcus

    Homolactic fermentation is a metabolic process where glucose is converted into lactic acid as the sole or primary end product.

    Here are some examples of homolactic fermenters and their applications:

    * Lactococcus lactis: Used in the production of yogurt, cheese, and buttermilk.

    * Lactobacillus acidophilus: Found in the human gut and used in probiotics.

    * Streptococcus thermophilus: Used in the production of yogurt and cheese.

    Note: While these are the most common examples, other LAB and even certain fungi can also perform homolactic fermentation under specific conditions.
