    The enzyme found in saliva that breaks chemical bonds between the sugar monomers in starches is amylase.

    Specifically, it's called salivary amylase or ptyalin. It begins the process of carbohydrate digestion in the mouth by breaking down starch into smaller polysaccharides and disaccharides.
