  • Understanding Yeast Types: Saccharomyces, Lager & Industrial Uses
The three basic types of yeast are:

    1. Saccharomyces cerevisiae: This is the most commonly used yeast for brewing beer, baking bread, and producing ethanol. It is known for its high fermentation efficiency and tolerance to high sugar concentrations.

    2. Saccharomyces pastorianus: This yeast is primarily used for brewing lager beers. It is cold-tolerant and produces a cleaner, more subtle flavor profile compared to S. cerevisiae.

    3. Candida utilis: This yeast is used for various industrial purposes, including producing single-cell protein and vitamin B12. It can also be used for bioremediation, breaking down pollutants.

These are just three examples, and there are many other types of yeast with different characteristics and uses.
