  • What is Yeast? The Science Behind Bread Rising
    The fungus that makes bread rise is called yeast.

    While technically a fungus, yeast is a single-celled organism that's different from the mold you might see on spoiled food. Yeast produces carbon dioxide as a byproduct of its metabolic processes. This carbon dioxide gets trapped in the dough, creating air pockets and making the bread rise.
