  • Agar Melting and Gelation Points: A Comprehensive Guide
    Agar doesn't have a single, fixed melting point. It has two distinct points:

    * Gelation point: This is the temperature at which agar starts to solidify from a liquid to a gel. It typically occurs between 32°C and 40°C (90°F and 104°F).

    * Melting point: This is the temperature at which the gel melts back into a liquid. It is around 85°C to 95°C (185°F to 203°F).

    Therefore, agar will solidify as it cools down below 40°C, but it will remain solid until it is heated above 85°C.
