  • Understanding the Building Blocks of Fat: Triglycerides, Glycerol & Fatty Acids
    The unit molecules that make up fat are triglycerides.

    A triglyceride is composed of:

    * Glycerol: A three-carbon alcohol molecule.

    * Three fatty acids: Long chains of hydrocarbons with a carboxyl group at one end.

    The fatty acids attach to the glycerol molecule through ester bonds.

    Types of fatty acids:

    * Saturated fatty acids: Have no double bonds between carbon atoms in their chains. They are typically solid at room temperature.

    * Unsaturated fatty acids: Have one or more double bonds between carbon atoms in their chains. They are typically liquid at room temperature.

    Therefore, fat is essentially a combination of glycerol and fatty acids, forming triglycerides.
