Here's why:
* Water is a polar molecule: This means it has a slightly positive charge on one end and a slightly negative charge on the other. This allows water molecules to attract each other strongly.
* Fats are non-polar molecules: They have a balanced distribution of charge and don't have the same strong attractions to water molecules.
Because of this difference in polarity, water molecules stick to each other rather than to the fat molecules, causing the fat to clump together and not dissolve.
This is why you see oil (a type of fat) floating on top of water.
