  • Sugarcane Jaggery Production: A Step-by-Step Guide
    Ingredients:

    * Sugarcane juice

    Equipment:

    * Sugarcane crusher

    * Boiling pot

    * Strainer

    * Ladle

    * Mold

    Instructions:

    1. Crush the sugarcane to extract the juice.

    2. Boil the sugarcane juice in a large pot over medium heat.

    3. Skim off any impurities that rise to the surface.

    4. Continue to boil the juice until it has reduced by about half.

    5. Strain the juice through a fine strainer to remove any remaining impurities.

    6. Ladle the strained juice into a mold.

    7. Let the juice cool and solidify for several hours or overnight.

    8. Once the jaggery has solidified, remove it from the mold and cut it into pieces.

    Tips:

    * To make jaggery with a stronger flavor, boil the sugarcane juice for a longer period of time.

    * To make jaggery with a lighter flavor, boil the sugarcane juice for a shorter period of time.

    * Jaggery can be stored at room temperature for several months.
