  • Benzoic Acid vs. Sugar Solubility in Alcohol: Polarity Explained
    Difference in polarity: Benzoic acid is a relatively polar molecule due to the presence of the carboxylic acid group (-COOH). This polar group can form hydrogen bonds with the polar hydroxyl group (-OH) of alcohol molecules. On the other hand, sugar molecules are much less polar, as they primarily contain hydroxyl groups attached to carbon atoms. The nonpolar nature of sugar molecules prevents them from forming strong hydrogen bonds with alcohol.

    - Benzoic acid: It is a weak organic acid with the molecular formula C6H5COOH. It is a white crystalline solid with a distinctive sweet smell. Benzoic acid is only slightly soluble in water (about 0.3% by weight at 25 °C). However, it is much more soluble in organic solvents such as alcohol, ether, and chloroform. This is because benzoic acid is a nonpolar molecule and therefore has a low affinity for water.

    - Sugar: Sugar is a general term for a group of carbohydrates that are sweet in taste. The most common sugar is sucrose, which is a disaccharide composed of glucose and fructose. Sucrose is a polar molecule and therefore has a high affinity for water. This is why sugar is so soluble in water.

    The difference in solubility between benzoic acid and sugar can be explained by the concept of "like dissolves like." This means that polar molecules tend to dissolve in polar solvents, while nonpolar molecules tend to dissolve in nonpolar solvents. Benzoic acid is a nonpolar molecule and therefore dissolves in nonpolar solvents such as alcohol, while sugar is a polar molecule and therefore dissolves in polar solvents such as water.

    Solubility in water: While benzoic acid has some solubility in water, sugar is highly soluble in water. The presence of multiple hydroxyl groups in the sugar molecule allows it to form extensive hydrogen bonds with water molecules, leading to its high solubility. In contrast, the carboxylic acid group of benzoic acid only forms a limited number of hydrogen bonds with water, resulting in its lower solubility.
