Sodium nitrate (NaNO3) is highly soluble in water and will completely dissolve when put into water. When these compounds dissolve in water, the ions (sodium, nitrogen, oxygen) that make up the compound separate and become surrounded by water molecules. The sodium nitrate then forms an aqueous solution, where the dissolved particles (ions) are evenly distributed throughout the water.
