  • Spinach and Iron: Understanding Bioavailability & Absorption
    While spinach does contain iron, it is not as easily absorbed by the body as iron from some other sources. Spinach contains a high amount of oxalic acid, which binds to iron and prevents it from being absorbed efficiently. Additionally, spinach also contains polyphenols, which can further reduce iron absorption. Therefore, while spinach does contain iron, it is not the best source of iron and other sources may be more effective at providing bioavailable iron.
