  • Zymase: Enzyme vs. Spore - Understanding Yeast Fermentation
    Zymase is not a thick-walled spore. It is an enzyme.

    Zymase is a complex mixture of enzymes found in yeast that catalyzes the fermentation of sugar into ethanol and carbon dioxide. It was discovered by the French chemist Louis Pasteur in the 19th century.

    Thick-walled spores are dormant, protective structures formed by some bacteria and fungi to survive harsh conditions like extreme temperatures, lack of nutrients, or dehydration. They are not involved in the process of fermentation.
