  • Amylase: The Key Enzyme in Starch Digestion - Types & Functions
    The enzyme that begins the breakdown of starch is amylase.

    There are two main types of amylase:

    * Salivary amylase: This enzyme is produced in the salivary glands and begins the digestion of starch in the mouth.

    * Pancreatic amylase: This enzyme is produced in the pancreas and continues the digestion of starch in the small intestine.

    Both amylases break down starch into smaller sugar molecules, such as maltose, which can then be further broken down into glucose by other enzymes.
