  • Amylase and Rice Digestion: How Starch is Broken Down
    Rice, like other starches, is broken down by amylase.

    There are two main types of amylase:

    * Salivary amylase: This enzyme is found in saliva and starts the digestion of starch in the mouth.

    * Pancreatic amylase: This enzyme is secreted by the pancreas and continues the digestion of starch in the small intestine.

    Both enzymes break down starch molecules into smaller sugar molecules, like maltose, which can then be absorbed by the body.
