  • Carbohydrate Digestion: Enzymes & Their Roles
    * Amylase: This enzyme breaks down complex carbohydrates, such as starch, into simpler sugars, such as maltose. Amylase is found in saliva and pancreatic juice.

    * Glucoamylase: This enzyme breaks down maltose into glucose. Glucoamylase is found in the small intestine.

    * Lactase: This enzyme breaks down lactose, the sugar found in milk, into glucose and galactose. Lactase is found in the small intestine.

    * Sucrase: This enzyme breaks down sucrose, the sugar found in table sugar, into glucose and fructose. Sucrase is found in the small intestine.

    * Maltase: This enzyme breaks down maltose into glucose. Maltase is found in the small intestine.

    * Isomaltase: This enzyme breaks down isomaltose, a sugar found in some plants, into glucose and fructose. Isomaltase is found in the small intestine.
