The Apollo missions were focused on landing humans on the Moon. Mercury is a much closer planet to the Sun, and the harsh conditions there (extreme heat, radiation) made it impossible with the technology available at the time.

While we've sent robotic probes to study Mercury, human exploration of the planet is still a long way off.
